WHAT IS A
BEJGL BAGEL?
A simple dough
Flour, water, salt, barley malt and leavened with 100% sourdough. After mixing, the dough has a long, slow cold fermentation in the fridge before baking. This results in a layered, complex flavor profile and better digestion.
A unique, low hydration wheat-flour based, ring-shaped bread of Jewish tradition that is first boiled, then baked.
After cold proofing, the bagel is boiled in a barley malt sweetened, slightly alkaline soda bath to deepen the bagel’s flavor and add a bit of a chew to its characteristically thin crust.
Typically topped with toasted seeds, herbs, or salt — some specialty bagels also get a topping of cheese or spice.
